海棉蛋糕里要用到double action baking powder,如果改用baking powder,效果会怎样？ 还有SP(sponge cake stabiliser)和sponge gel 一样吗？我就是还没找到这2种材料，因此无法开工。

这两样你可以去PXXXX HXXX 买，我是在那边买的。Double action baking powder 跟 baking powder 是一样的。SP & Sponge gel 我就不太清楚了，我建议你去烘焙专卖店查询。

I don't think the double action baking powder and baking powder is the same. Baking powder won't give Sponge cake "发" too much. So that is 2 diff thing.

Since u stay near Woodlands, there is Phoon Huat near Sembawang MRT too so maybe you can try to find whether they hv it there or not.

i tried sponge cake, when it is in the oven, it rise, but when it is out from the oven, it sink, so sad... :(

Me too but the cake is nice and spongy.
Hi eileen,
I have the same problem last time, but i finally find out what goes wrong cuz i never remove the cake from the tin after taking out from oven, is a must to remove from tin immediately after baking.
